Once cooked, remove artichokes from pot and place them stem side up on a paper towel to allow the water to drain out.

Next, preheat oven to preheat oven to 400 degrees F (200 degrees C).

Spray a small baking pan with non-stick cooking spray. Place the artichokes into the baking pan and splay the leaves, sprinkling the Ground Chicken (8 oz) in between the layers.

Meanwhile, in a small saucepan over medium heat, melt the Unsalted Butter (3 Tbsp). Add the All-Purpose Flour (3 Tbsp) and continue to whisk for a minute.

Gradually pour in the Whole Milk (1 cup) and continue to whisk until thickened about 3 to 5 minutes.

Remove saucepan from heat and stir in Cheddar Cheese (1/2 cup), Hot Sauce (1/3 cup), Salt (to taste), and Ground Black Pepper (to taste).

Pour the cheese sauce over the artichokes and top with Blue Cheese (to taste).
