Prepare the Lemon (1 teaspoon) and Lemon Juice (1 tablespoon).
Cream Unsalted Butter (1/2 cup) and Granulated Sugar (3/4 cup) in the bowl of a stand mixer until light and fluffy.
Add lemon juice, lemon zest, Egg (1) and Vanilla Extract (1/2 teaspoon) and mix until incorporated.
Add All-Purpose Flour (1 1/2 cup), Salt (1/4 teaspoon), Baking Powder (1/4 teaspoon) and Baking Soda (1/4 teaspoon) and mix until no flour can be seen in dough. Scrape down the sides and give the dough a good stir.
Refrigerate the dough for 20 minutes. Preheat the oven to 350 degrees F (180 degrees C). Place the Powdered Confectioners Sugar (1/2 cup) onto a plate. After 20 minutes, scoop the dough out using a teaspoon and roll into balls.
Coat the balls in the confectioners’ sugar and place onto cookie sheets. Bake for 10-11 minutes.
Let the cookies cool on the cookie sheet for a couple minutes before transferring to a wire rack. Enjoy!
