Step 1
Into a bowl, add
Boneless, Skinless Chicken Breasts (2.5 lb)

Soy Sauce (2 Tbsp)
, and
Ground Black Pepper (1/2 tsp)
. Stir to combine. Let marinate for 20-30 minutes.
Step 2
Into another bowl, add
Chicken Broth (1 cup)
,
Granulated Sugar (1/3 cup)
,
Lemon Juice (2 Tbsp)
,
Corn Starch (1 1/2 Tbsp)
,
Salt (3/4 tsp)
, and
Lemons (3 slices)
. Stir to combine.
Step 3
Into another bowl, add
Eggs (2)
,
Corn Starch (1/4 cup)
,
Ground Black Pepper (1/2 tsp)
,
Salt (1/2 tsp)
, and
Baking Powder (1/2 tsp)
. Mix until smooth.
Step 4
Add chicken to the batter. Mix to combine.
Step 5
In a frying pan, heat up
Cooking Oil (as needed)
. When oil is hot, add chicken and fry until golden brown. Remove with a slotted spoon and drain excess oil on a paper towel.
Step 6
Remove all but a little bit of the oil from the pan and add
Onion (1)
. Cook for 1 minute.
Step 7
Add
Garlic (1 tsp)
and cook on high until onion is caramelized.
Step 8
Add lemon sauce to the pan. Stir well.
Step 9
When sauce begins to thicken, return chicken to the pan. Stir well until chicken is coated.
Step 10
Serve over rice if desired and and enjoy!
