Step 1
For the crust, whisk the All-Purpose Flour (1 1/2 cups) , Salt (1/4 tsp) and Granulated Sugar (1 tsp) together. Blend in the Unsalted Butter (1/2 cup) until it resembles peas.
Step 2
Add the Water (1/3 cup) a teaspoon at a time until a dough forms. Wrap in plastic wrap and chill.
Step 3
Combine Fresh Blueberries (1 cup) , the zest of a Lemon (1) , half the lemon juice, Ground Cinnamon (1/4 tsp) and Salt (1 pinch) .
Step 4
Preheat the oven to 375 degrees F (190 degrees C).
Step 5
Roll out dough and cut into equal pieces. Place a tablespoon of filling onto each piece of dough. Fold in half and crimp edges with fork. Poke holes for steam to escape.
Step 6
Bake for 30-35 minutes until golden brown and bubbly. Let cool on a wire rack.
Step 7
Create an icing with remaining juice of half a lemon and Powdered Confectioners Sugar (to taste) . Drizzle over the top of the pies.
