In a saucepan add the Guinness® Stout Beer (1 3/4 cups), Mixed Fruit Peel (1 cup), Raisins (1 cup), Cherry (3/4 cup), Brown Sugar (3/4 cup), Honey (2 Tbsp), West Indian Browning (1 Tbsp), Molasses (2 tsp), and Vanilla Extract (1 tsp). Place on a medium flame, stir well and as soon as you start seeing bubbles on the edges turn off the stove and set aside to cool.

Preheat your oven to 350 degrees F (180 degrees C).

Now it’s time mix the dry ingredients in a large bowl. In goes the All-Purpose Flour (3 cups), Baking Powder (2 tsp), Ground Cinnamon (1 tsp), Ground Nutmeg (1 tsp), Ground Allspice (1 tsp), Ground Ginger (1 tsp) and Salt (as needed). Stir well to incorporate. Now add the Butter (4 Tbsp), Egg (1), and everything from the sauce pan. You’ll have some work here. Mix into a dough, but try your best to not over-work it.

Place the dough into a greased/flour-dusted baking pan (about 11x5 inches).

Place on the middle rack of the oven. It will take about 1 hour to fully bake. Stick a toothpick through the middle of the bun and if it comes out clean, it’s done.

Set aside to cool. If desired, brush with a simple syrup (equal parts water and sugar) to give it that classic shine, but don’t slice until it’s fully cooled. Enjoy!
