Preheat oven to 350 degrees F (176 degrees C).
Into the bowl of a stand mixer fitted with a paddle attachment, add the Granulated Sugar (1 1/2 cup) and Crisco (1/2 cup). Cream together until light and fluffy, about 3 minutes.
Add Egg (2) and beat together until well combined, about 1-2 minutes.
In a small bowl, mix Premium Cocoa Powder (2 tablespoon), Blue Food Coloring (1 fluid ounce), and Purple Food Coloring (2 dash).
Add cocoa powder and food coloring mixture. Mix until well combined.
Combine All-Purpose Flour (2 1/4 cup) and Salt (1 teaspoon). Add half of this dry mixture into the batter and mix until just combined.
Add half the Buttermilk (1/2 cup), the Vanilla Extract (2 teaspoon), Vanilla Bean Paste (1 teaspoon). Mix until combined.
Add remaining dry ingredients and mix, then add the rest of the Buttermilk (1/2 cup) and mix once more.
Add Distilled White Vinegar (1 tablespoon) and Baking Soda (1 teaspoon). Give batter one last mix to make sure everything is well-incorporated.
Divide batter between two 9-inch cake pans.
Bake for 20-25 minutes.
Once cakes are cooled, frost with Cream Cheese Frosting (to taste) as desired.
