Guacamole

Large Ripe Avocados , peeled, pitted
use more if your avocados are small
1 Tbsp
Freshly Squeezed Lime Juice
1 Tbsp
Freshly Squeezed Lemon Juice

Jalapeño Pepper , deseeded, finely chopped

Author's Notes

Tip for storing: Take a piece of plastic wrap and smash it down over the top of the guac so that no air can get in. Store in refrigerator until ready to use. Makes 2 cups guacamole and 72 chips.

Directions

Step 1
Roughly mash Avocados (3) with Lime Juice (1 Tbsp) and Lemon Juice (1 Tbsp) using a potato masher or a fork.
Step 2
Next, add the Red Onions (1/2 cup) and Jalapeño Pepper (1) , then mash into the avocado. Stir in the Fresh Cilantro (1/2 cup) and season with Kosher Salt (to taste) .
Step 3
Preheat oven to 400 degrees F (205 degrees C).
Step 4
Brush the Yellow Corn Tortillas (12) with Safflower Oil (to taste) . Cut them into wedges (6 per tortilla) and sprinkle with Sea Salt (to taste) .
Step 5
Bake in the oven until browned and edges start to curl, about 10 minutes.
Step 6
Toss the chips with Lime Juice (to taste) and serve.
