Roughly mash Avocado (3) with Lime Juice (1 tablespoon) and Lemon Juice (1 tablespoon) using a potato masher or a fork.
Next, add the Red Onion (1/2 cup) and Jalapeño Pepper (1), then mash into the avocado. Stir in the Fresh Cilantro (1/2 cup) and season with Kosher Salt (to taste).
Preheat oven to 400 degrees F (200 degrees C).
Brush the Yellow Corn Tortilla (12) with Safflower Oil (to taste). Cut them into wedges (6 per tortilla) and sprinkle with Sea Salt (to taste).
Bake in the oven until browned and edges start to curl, about 10 minutes.
Toss the chips with Lime Juice (to taste) and serve.
