Step 1
In a mixing bowl add Milk (9 oz) , Cream (3.5 oz) , All-Purpose Flour (1 2/3 cups) , Granulated Sugar (3 Tbsp) , Butter (1 1/2 Tbsp) , Eggs (3) , and Salt (1 pinch) . Mix on high speed for 4-5 minutes.
Step 2
Place the mixture in the fridge for 1 hour. Once it's chilled, prep your pan for crepes.
Step 3
Add one ladle of the mixture and let cook, the first one will usually not turn out too well so set it aside.
Step 4
Ladle in another spoonful of the mixture and spin around on the pan so as to have an even thickness.
Step 5
Once cooked, flip and cook the other side. Repeat for the rest of the mixture. Let them rest before eating or fill them up with toppings of choice and enjoy.
