In a mixing bowl add
Milk (9 oz)
Cream (3.5 oz)
All-Purpose Flour (1 2/3 cups)
Granulated Sugar (3 Tbsp)
Butter (1 1/2 Tbsp)
Salt (1 pinch)
. Mix on high speed for 4-5 minutes.
Place the mixture in the fridge for 1 hour. Once it's chilled, prep your pan for crepes.
Add one ladle of the mixture and let cook, the first one will usually not turn out too well so set it aside.
Ladle in another spoonful of the mixture and spin around on the pan so as to have an even thickness.
Once cooked, flip and cook the other side. Repeat for the rest of the mixture. Let them rest before eating or fill them up with toppings of choice and enjoy.
