In a mixing bowl, combine Self-Rising Flour (2 cups), Chili Pepper (1 tsp) and Ground Black Pepper (1/2 tsp).

In the middle of the flour mixture, add Beer (2 cups) and whisk until combined.

Let rest, covered for 1 hour. While you wait, peel Onions (2) and cut crosswise 1/3-inch thick, and separate into rings.

Heat your deep fryer to 370 degrees F (185 degrees C) with 2-inches of Vegetable Oil (as needed). Dust the onion rings in All-Purpose Flour (1 cup), shaking off the excess

Generously coat the onion rings with the beer batter.

Working in batches, fry the onion rings until they are golden.

Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

Mix Ketchup (to taste) and Sriracha (to taste) for the dipping sauce. Serve hot and enjoy!
