Preheat oven to 350 degrees F (180 degrees C), spray your mini muffin pan and set aside.
Cream Light Margarine (2 tablespoon), Brown Sugar (1/2 cup), Vegetable Oil (1 teaspoon). Add Egg (1), Vanilla Extract (1 teaspoon) and mix. Stir in All-Purpose Flour (3/4 cup), Baking Soda (1/2 teaspoon) and Mini Chocolate Chips (1 1/2 tablespoon).
Place a very small amount of cookie batter into 18 muffin cups and put in oven for 2 minutes, just enough to melt down the batter. Divide Light Peanut Butter (2 tablespoon) the 18 cookie bites, placing a small amount on top of your batter.
Top with the remaining cookie batter. Bake in oven for 8 to 10 minutes.
