Step 1
Preheat oven to 350 degrees F (180 degrees C), spray your mini muffin pan and set aside.
Step 2
Cream Light Margarine (2 Tbsp) , Brown Sugar (1/2 cup) , Vegetable Oil (1 tsp) . Add Egg (1) , Vanilla Extract (1 tsp) and mix. Stir in All-Purpose Flour (3/4 cup) , Baking Soda (1/2 tsp) and Mini Chocolate Chips (1 1/2 Tbsp) .
Step 3
Place a very small amount of cookie batter into 18 muffin cups and put in oven for 2 minutes, just enough to melt down the batter. Divide Light Peanut Butter (2 Tbsp) the 18 cookie bites, placing a small amount on top of your batter.
Step 4
Top with the remaining cookie batter. Bake in oven for 8 to 10 minutes.
