Slice the Onion (1) into rings.
Dice the Bell Pepper (1/4 cup) and Mushroom (1). In a small bowl, mix them with Egg (2), Milk (2 tablespoon), Light Shredded Cheese Blend (1/4 cup), Bacon Bits (1 tablespoon), Salt (1 dash), and Ground Black Pepper (1 dash).
Spray and heat up a frying pan on the stove on medium. Place the onion rings in the hot pan and carefully pour the egg mixture into the rings. Fill them almost to the top. Cover with a lid and cook until the eggs are done.
This recipe should make 5-6 rings depending on the size of your onion rings. Enjoy!
