Mix the strawberries and peaches together in a bowl. Add the Granulated Sugar (2 Tbsp) and Vanilla Extract (1 tsp) and toss to coat. Set aside while the crust is made.

Cut in the Butter (1/2 cup) until the mixture is crumbly. Add the Water (1/4 cup), stirring with a fork until the flour is moistened. Add up to 2 tbsp of water if the dough seems dry. Gently knead until the dough comes together and forms into a ball.
