Cube the Butter (4 ounce) and beat the Egg (1).
Preheat oven to 425 degrees F (220 degrees C). Peel, pit, and slice the Peach (2) and slice the Fresh Strawberry (2 cup).
Mix the strawberries and peaches together in a bowl. Add the Granulated Sugar (2 tablespoon) and Vanilla Extract (1 teaspoon) and toss to coat. Set aside while the crust is made.
In a bowl, whisk the All-Purpose Flour (1 1/2 cup), Granulated Sugar (3 tablespoon), and Salt (1/4 teaspoon) together.
Cut in the Butter (1/2 cup) until the mixture is crumbly. Add the Water (1/4 cup), stirring with a fork until the flour is moistened. Add up to 2 tbsp of water if the dough seems dry. Gently knead until the dough comes together and forms into a ball.
Line a pan with baking sheet. Roll dough into a 12 inch circle. Place circle on the sheet and spoon the fruit into the center of the dough leaving a 2 to 3 inch border. Gently fold the edges over the fruit, overlapping if necessary. Now pour all but 2 tbsp of juice on the fruit.
Brush crust with beaten egg.
Bake for 25 to 35 minutes. Enjoy!
