Similar to minestrone soup, this soup recipe can use whatever vegetables are in season. Best enjoyed when made with fresh vegetables. Also, use whatever amounts you have available! This recipe is very flexible.

Start by heating a large pot with
Water (to taste)
Salt (to taste)
. While the water is heating, you can start chopping the veggies.
As you chop the
Green Beans (to taste)
Carrots (to taste)
Leeks (to taste)
Broccoli (to taste)
Collard Greens (to taste)
Fresh Spinach (to taste)
Potatoes (to taste)
add them to the pot.
Once all your veggies are in the pot, cook for 15-20 minutes.
After 10 minutes have elapsed add the
Pasta (to taste)
Canned Chickpeas (to taste)
Once the another 10 minutes have elapsed the soup should be ready. Remove from the heat and let it rest covered for a few minutes.
That's it! You are ready to enjoy your soup. Serve warm with extra salt and pepper if needed.
