Start by placing the
Whole Cardamom Pods (12)
in a mortar and crushing till ground.
In a bowl add the
Milk (12.5 oz)
Fresh Yeast (1/3 cup)
together with the ground cardamom.
In a stand mixer add the
All-Purpose Flour (5 cups)
and make a small hole in the center. Add the
, zest of the
Oranges (to taste)
Butter (1/4 cup)
Granulated Sugar (1/2 cup)
, a pinch of salt and mix. Next, slowly add the milk mixture into the mixing bowl as it mixes.
Once the dough is well-mixed we can begin to knead. If you touch it, you'll notice it's quite sticky which is why we must knead by hand.
Flour a work surface and add the dough. Add flour as you knead the dough and stop adding once the dough no longer sticks to your hands.
In a flat tray add some flour, place the ball of dough on top. Lightly flour the top and cover with a cloth. Let it sit aside for 1 hour.
Sprinkle your working surface with flour again and knead the dough again. Roll out the dough with a rolling pin, cut with a circular cutting tool used for donuts. Place the donuts on a tray lined with baking paper and let rest covered with a cloth for a bit.
In a pan add
Frying Oil (to taste)
and heat on medium heat. Once the oil is hot, fry the donuts. Once golden brown flip and fry the other side.
While the donuts are frying, in a bowl add
Fresh Yeast (2 1/2 Tbsp)
Powdered Confectioners Sugar (to taste)
and mix. Slowly add
Water (to taste)
until you've reached the desired thickness.
As they are done, remove the donuts and place on a plate lined with paper towels to absorb the excess oil and drizzle the glaze on top.
