Step 1
Start by placing the
Whole Cardamom Pods (12)
in a mortar and crushing till ground.
Step 2
In a bowl add the
Milk (12.5 oz)
and
Fresh Yeast (2 1/2 Tbsp)
together with the ground cardamom.
Step 3
In a stand mixer add the
All-Purpose Flour (4 3/4 cups)
and make a small hole in the center. Add the
Egg (1)
,
Orange Zest (to taste)
,
Butter (1/4 cup)
,
Granulated Sugar (1/2 cup)
, a pinch of salt, and mix. Next, slowly add the milk mixture into the mixing bowl as it mixes.
Step 4
Once the dough is well-mixed we can begin to knead. If you touch it, you'll notice it's quite sticky which is why we must knead by hand.
Step 5
Flour a work surface and place the dough. Add flour as you knead the dough and stop adding once the dough no longer sticks to your hands.
Step 6
In a flat tray add some flour, place the ball of dough on top. Lightly flour the top and cover with a cloth. Let it sit aside for 1 hour.
Step 7
Sprinkle your working surface with flour again and knead the dough again. Roll out the dough with a rolling pin, cut with a circular cutting tool used for donuts. Place the donuts on a tray lined with baking paper and let rest covered with a cloth for a bit.
Step 8
In a pan add
Frying Oil (as needed)
and heat on medium heat. Once the oil is hot, fry the donuts. Once golden brown flip and fry the other side.
Step 9
While the donuts are frying, in a bowl add
Butter (1 1/2 Tbsp)
,
Powdered Confectioners Sugar (to taste)
, and mix. Slowly add
Water (to taste)
until you've reached the desired thickness.
Step 10
As they are done, remove the donuts and place them on a plate lined with paper towels to absorb the excess oil and drizzle the glaze on top.
