Pour Cottage Cheese (1 cup) and Egg (4) in a blender.
Blend together until thoroughly mixed.
Pour blender ingredients into a bowl and add the Coconut Flour (1/2 cup), Salt (1/2 teaspoon), Baking Soda (1/2 teaspoon) and Vanilla Extract (1 teaspoon). Stir well and allow to sit for 5 minutes. The batter will thicken while it sits.
Put Coconut Oil (2 tablespoon) or more into a frying pan and bring to low heat. Scoop 1/4 cup of batter and pour onto frying pan.
Cook about 3 minutes on 1 side and 2 minutes once flipped.
Serve with your choice of fresh berries, or a sugar free syrup. Enjoy!
