Preheat the oven to 350 degrees F (176 degrees C). Spray an 8 by 8-inch baking dish well with cooking spray.
Whisk the All-Purpose Flour (2 cup), Premium Cocoa Powder (1/2 cup), Baking Soda (1 1/2 teaspoon), Ground Cinnamon (1 teaspoon), and Salt (1/2 teaspoon) together in a bowl.
In another large mixing bowl, stir the Dark Brown Sugar (1 1/4 cup), Canola Oil (1/2 cup), and Vanilla Extract (1 teaspoon) together thoroughly.
Slowly stir the dry ingredients into the wet ingredients until you have a crumbly, almost dry mixture. This is normal. Then stir in the Zucchini (1) until the batter starts to soften and become thick.
Transfer the batter to the baking dish and make sure it is in an even layer.
Bake the tray for about 30 minutes, until the edges just start to crisp and the center is baked through.
Let them cool completely for an hour, then cut and serve!
