Step 1
Chop the
Napa Cabbage (2 cups)
into fine pieces.
Step 2
Chop the
Green Cabbage (2 cups)
into fine pieces about 1/8-inches thick.
Step 3
Cut
Chinese Chives (1 cup)
into 1/8-inch pieces.
Step 4
Grate
Garlic (1 Tbsp)
and
Fresh Ginger (1 1/2 Tbsp)
.
Step 5
Set all ingredients aside.
Step 6
In a large bowl, add in
Ground Pork (13 oz)
,
Ground White Pepper (1/8 tsp)
,
Soy Sauce (2 Tbsp)
,
Granulated Sugar (1 Tbsp)
,
Sherry Wine (2 Tbsp)
,
Chicken Stock (1 Tbsp)
,
Oyster Sauce (1 Tbsp)
and vigorously mix together.
Step 7
Add in the chopped and grated ingredients. Roughly mix ingredients together. Wrap the bowl in plastic wrap and refrigerate for 30 minutes to an hour.
Step 8
To make the sauce, grate
Fresh Ginger (1 tsp)
and add it to a small bowl.
Step 9
Mince a
Scallions (1 Tbsp)
. Add
Soy Sauce (1/3 cup)
,
Hoisin Sauce (1/2 Tbsp)
,
Granulated Sugar (1 1/2 Tbsp)
,
Chili Garlic Sauce (1/2 Tbsp)
,
Distilled White Vinegar (2 Tbsp)
, and
Sesame Oil (1 tsp)
. Mix well and set aside.
Step 10
Sprinkle
Potato Starch (1 pinch)
on a plate or pan and on top of the dumplings to keep them from sticking. Wet edges of
Wonton Wrappers (45)
with a small amount of water. Put a teaspoon of meat mixture in the middle of a wrapper.
Step 11
Fold the dumpling together and use your thumb to push the wrapper towards one side. Repeat.
Step 12
Turn the stove to high heat and when the pan is hot, turn it down to medium and add in
Vegetable Oil (1 Tbsp)
.
Step 13
Cook dumplings in batches of 8-10 at a time. Cook for about 30 seconds or until the bottom is golden brown.
Step 14
Add in
Water (2/3 cup)
. Add more if necessary. The dumplings should be 2/3 covered in water. Cover with a lid and for about 5 minutes to reduce the water.
Step 15
If you see big bubbles forming, turn the heat to the lowest setting and continue cooking until there is a little water left and add in
Sesame Oil (1 Tbsp)
. Swirl the pan around so the dumplings are evenly coated with sesame oil.
Step 16
Cover with lid and cook for 30 seconds. Remove the lid and turn off the heat. Use a plate that is roughly the same size as the pan, put it over the dumplings and flip it over. Tap the bottom of the pan several times to loosen the dumplings.
Step 17
Serve and enjoy with the dipping sauce!
