Preheat your oven to 450 degrees F (230 degrees C).
Peel outer husk of Tomatillo (2) and rinse.
Halve tomatillos. Chop Onion (1/2) and Zucchini (1) into large chunks. Be sure to leave the skin on the garlic.
Place tomatillos, onion, Jalapeño Pepper (1), Garlic (2 clove), and zucchini on baking sheet. Roast in the preheated oven for 15 minutes.
Place roasted ingredients, Salt (1/2 teaspoon) and Grapeseed Oil (1 tablespoon) into a blender. Blend well until salsa is smooth, creamy and emulsified.
Serve on your favorite tacos or along side chips.
