Step 1
Preheat your oven to 450 degrees F (230 degrees C).
Step 2
Peel outer husk of
Tomatillos (2)
and rinse.
Step 3
Halve tomatillos. Chop
Onion (1/2)
and
Zucchini (1)
into large chunks. Be sure to leave the skin on the garlic.
Step 4
Place tomatillos, onion,
Jalapeño Pepper (1)
,
Garlic (2 cloves)
, and zucchini on baking sheet. Roast in the preheated oven for 15 minutes.
Step 5
Place roasted ingredients,
Salt (1/2 tsp)
and
Grapeseed Oil (1 Tbsp)
into a blender. Blend well until salsa is smooth, creamy and emulsified.
Step 6
Serve on your favorite tacos or along side chips.
