Preheat your grill and grill pan to medium-high with lid closed.
Step 2
Prepare Carrots (1 cup) , Parsnips (1 cup) , Red Onions (1 cup) , Sweet Potatoes (1 cup) , and Brussels Sprouts (1 cup) into uniformly sized pieces.
Step 3
Toss with the Olive Oil (to taste) and Salt and Pepper (to taste) .
Step 4
Place into the grill pan and cook until edges begin to blacken, shaking once or twice throughout.
