French fries don’t have to be made with potatoes. Parsnips, carrots, and summer squash all work perfectly. And while we’re at it, why not try sweet potatoes, beets, or rutabagas? When I’m feeling lazy and don’t want to take the time to cut up some veggies for roasting, I'll just use green beans.

Preheat the oven to 425 degrees F (220 degrees C). Remove the stems of Green Beans (6 cups) and season them with Olive Oil (1 tsp), Salt (to taste), and Ground Black Pepper (to taste).

Pour beans onto two baking sheets, so they're not over-crowded. Roast for 10 minutes, flip and rotate their position in the oven, and roast for 6 to 7 minutes more.

To make the ketchup, blend Fresh Dill (2 tsp), Fresh Parsley (2 tsp), Fresh Basil (2 tsp), Garlic (1 clove), Cayenne Pepper (1 pinch), Fresh Ginger (1 pinch), Maple Syrup (1 tsp), Dijon Mustard (1 tsp), Olive Oil (2 Tbsp),Fresh Chives (1 Tbsp), Canned Tomato Purée (1 cup), Distilled White Vinegar (1 Tbsp), Salt (to taste) and Ground Black Pepper (to taste). Blend together. Taste and adjust seasoning if needed.
