Green Bean Fries

4.5
2 Ratings
French fries don’t have to be made with potatoes. Parsnips, carrots, and summer squash all work perfectly. And while we’re at it, why not try sweet potatoes, beets, or rutabagas? When I’m feeling lazy and don’t want to take the time to cut up some veggies for roasting, I'll just use green beans.

Step 2

To make the ketchup, blend Fresh Dill (1/2 Tbsp) , Fresh Parsley (1/2 Tbsp) , Fresh Basil (1/2 Tbsp) , Garlic (1 clove) , Cayenne Pepper (1 pinch) , Fresh Ginger (1 pinch) , Maple Syrup (1 tsp) , Dijon Mustard (1 tsp) , Olive Oil (2 Tbsp) , Fresh Chives (1 Tbsp) , Canned Tomato Purée (1 cup) , Distilled White Vinegar (1 Tbsp) , Salt and Pepper (to taste) . Blend together. Taste and adjust seasoning if needed.
Step 4
