Preheat the oven to 375 degrees F (190 degrees C).
Soften Butter (1 cup) by melting for 1 minute in a small saucepan.
In a medium bowl, cream together butter, Brown Sugar (1 cup) and Granulated Sugar (1 cup).
Beat in Egg (2) one at a time.
Then stir in Vanilla Extract (1 teaspoon).
In another bowl, combine All-Purpose Flour (2 cup), Baking Soda (1 teaspoon), Salt (1 teaspoon) and Ground Cinnamon (1 1/2 teaspoon).
Combine wet and dry ingredients.
Add in Quick Cooking Oats (3 cup) and mix well.
Lay wax paper onto a cookie sheet. Spoon the dough into walnut sized balls, and place 2-inches apart on the sheet.
Bake for 8 minutes in the preheated oven. Check on the oven after 6 minutes, the cookies may harden depending on the type of oven.
Allow cookies to sit on the sheet for 5 minutes before transferring to a wire rack and cool completely.
