Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Soften Butter (1 cup) by melting for 1 minute in a small saucepan.
Step 3
In a medium bowl, cream together butter, Brown Sugar (1 cup) and Granulated Sugar (1 cup) .
Step 4
Beat in Eggs (2) one at a time.
Step 5
Then stir in Vanilla Extract (1 tsp) .
Step 6
In another bowl, combine All-Purpose Flour (2 cups) , Baking Soda (1 tsp) , Salt (1 tsp) and Ground Cinnamon (1/2 Tbsp) .
Step 7
Combine wet and dry ingredients.
Step 8
Add in Quick Cooking Oats (3 cups) and mix well.
Step 9
Lay wax paper onto a cookie sheet. Spoon the dough into walnut sized balls, and place 2-inches apart on the sheet.
Step 10
Bake for 8 minutes in the preheated oven. Check on the oven after 6 minutes, the cookies may harden depending on the type of oven.
Step 11
Allow cookies to sit on the sheet for 5 minutes before transferring to a wire rack and cool completely.
