This recipe is adapted from one I learned at a cooking class in North Carolina. The base of the soup is composed of two fall market items that store quite well, sweet potatoes and apples, so it’s just as easy to make in the winter as in late autumn. Adapted from Durham Spirits Company.

Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Wash Sweet Potatoes (7 1/2 cups) and place on a baking sheet, leaving about a third of the baking sheet open since you'll be adding the apples part way through. Roast for 1 hour.
Step 3
While the potatoes are roasting, peel, core, and slice the Gala Apples (3) and place in a small bowl. Add Olive Oil (1 Tbsp) and Curry Powder (1 tsp) and mix well.
Step 4
Add the apples to the baking sheet for the last 15 minutes that the potatoes are roasting. Once the roasting is done, remove baking sheet from the oven and set aside until the potatoes are cool enough to handle.
Step 5
While the potatoes are cooling, chop the Yellow Onion (1) , Chipotle Peppers in Adobo Sauce (1) , and Bacon (4 slices) . Slice the Garlic (3 cloves) .
Step 6
Once cool, slice into the skins, peel them off, and discard them.
Step 7
Heat Olive Oil (1 Tbsp) with the bacon in a large pot over medium heat. Add the chopped onion, Sea Salt (1/2 tsp) and Ground Black Pepper (1/2 tsp) and cook until onions are soft and translucent, stirring occasionally.
Step 8
Add the chipotle and the garlic and cook for about 5 more minutes.
Step 9
Add Apple Cider (1 cup) , Chicken Stock (4 cups) , apples, and the peeled potatoes. Bring to a boil, then reduce to a simmer. Simmer for 20 minutes.
Step 10
Puree the soup using an immersion blender or a regular blender. Soup should be fairly thick. If you prefer a thinner soup, add a bit more chicken stock or apple cider.
Step 11
Serve immediately. This also makes great leftovers.
