Step 1
Rinse the uncooked
Brown Rice (2 cups)
in a strainer, until the water is clear.
Step 2
Place the rinsed rice in a pot with
Water (3 cups)
. Bring water to a boil. Turn down to a simmer for about 45 minutes, then turn off heat, but leave the rice covered in the pot, on the burner, for about another 15 minutes.
Step 3
While the rice is cooking, slice the
Bell Peppers (2)
and
Garlic (3 cloves)
. Chop the
Broccoli (1 head)
into florets. Thinly slice the white part of the
Scallions (1 bunch)
and set them aside for garnish later.
Step 4
Season the
Lean Ground Beef (1 lb)
with
Chili Powder (2 Tbsp)
,
Soy Sauce (2 Tbsp)
,
Salt (to taste)
, and a generous pinch of
Freshly Ground Black Pepper (to taste)
.
Step 5
In a skillet over medium heat, cook the beef until browned. Make sure to break it up as it browns.
Step 6
Once the meat has browned, add in the chopped vegetables and a bit of
Chicken Stock (1 splash)
and simmer for about 10 minutes.
Step 7
Put cooked brown rice in a bowl, top with beef and veggie mixture. Sprinkle with
Sesame Seeds (to taste)
and sliced scallions. Enjoy!
