Cooking Instructions

Step 1
Prepare Soba Noodles (4 cups) according to package directions and set aside.
Step 2
Thinly slice Red Bell Pepper (1) .
Step 3
Roughly chop Fresh Cilantro (1/4 cup) .
Step 4
Spiralize the Carrots (2) .
Step 5
Spiralize the Cucumber (1) .
Step 6
To make peanut sauce, run food processor and add Fresh Ginger (1 1/2 in) and Garlic (1 clove) .
Step 7
Once garlic clove and ginger are finely minced, add the Creamy Peanut Butter (1/2 cup) , Reduced Sodium Soy Sauce (2 Tbsp) , Lime Juice (1 Tbsp) , Brown Sugar (1 tsp) , and Crushed Red Pepper Flakes (1/2 tsp) .
Step 8
Slowly add the Water (1/3 cup) 1 tablespoon at a time and blend until smooth.
Step 9
To assemble each jar, divide all the ingredients into 4 portions and in each jar, layer the ingredients as follows: Peanut Sauce.
Step 10
Sprinkle on thinly sliced Scallions (4) .
Step 11
Add in soba noodles.
Step 12
Add in spiralized carrots and cucumbers.
Step 13
Add in red bell pepper and cilantro.
Step 14
Top with Peanuts (1/2 cup) .
Step 15
Place jars in the fridge and consume within 5 days. Enjoy!
