Prepare Soba Noodles (4 cup) according to package directions and set aside.
Thinly slice Red Bell Pepper (1).
Roughly chop Fresh Cilantro (1/4 cup).
Spiralize the Carrot (2).
Spiralize the Cucumber (1).
To make peanut sauce, run food processor and add Fresh Ginger (1 1/2 inch) and Garlic (1 clove).
Once garlic clove and ginger are finely minced, add the Creamy Peanut Butter (1/2 cup), Reduced Sodium Soy Sauce (2 tablespoon), Lime Juice (1 tablespoon), Brown Sugar (1 teaspoon), and Crushed Red Pepper Flakes (1/2 teaspoon).
Slowly add the Water (1/3 cup) 1 tablespoon at a time and blend until smooth.
To assemble each jar, divide all the ingredients into 4 portions and in each jar, layer the ingredients as follows: Peanut Sauce.
Sprinkle on thinly sliced Scallion (4).
Add in soba noodles.
Add in spiralized carrots and cucumbers.
Add in red bell pepper and cilantro.
Top with Peanuts (1/2 cup).
Place jars in the fridge and consume within 5 days. Enjoy!
