Step 1
Place the
Butter (1/2 cup)
in the freezer for 30 minutes.
Step 2
Turn the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper, or lightly grease the pan if you don't have the paper.

In a large bowl, combine the
Whole Wheat Flour (2 1/2 cups)
,
Baking Powder (1 Tbsp)
, and
Salt (1 tsp)
.
Step 4
Prepare your
Jalapeño Pepper (1)
and
Sharp Cheddar Cheese (1 cup)
.
Step 5
Remove the butter from the freezer and grate it directly into the flour mixture.
Step 6
Using your hands, gently squish the butter into the flour until everything is incorporated but not smooth. The chunks of butter will create flaky scones.
Step 7
Add the jalapeno, cheese,
Eggs (2)
, and
Milk (1/2 cup)
to the bowl, then use your hands to gently mix everything until it just comes together.
Step 8
Sprinkle flour on a clean countertop and dump the dough onto it.
Step 9
Gently shape the dough into a disc about 1½" thick. Cut the dough into six triangles, like a pizza, and move them to the cookie sheet.
Step 10
In a small bowl, gently beat the
Egg (1)
for the egg wash. Brush it over the scones.
Step 11
Then sprinkle
Salt (to taste)
and
Ground Black Pepper (to taste)
over each one.
Step 12
Bake for 25 minutes or until the scones are golden brown. Serve and enjoy!
