Author's Notes

Use this cream while it is still warm as a waffle or pancake topping. To enjoy as pudding, pour into molds and refrigerate.

Coarsely chop Fresh Blackberries (2 cups). Reserve some for garnish.

Separte the yolks and white of Farmhouse Eggs® Large Brown Eggs (2). Whip the egg whites to stiff peaks. Set aside.

For the waffles, begin by mixing the Cake Flour (1 1/3 cups), Baking Powder (1 Tbsp), Granulated Sugar (1/2 tsp), Salt (to taste), and Blackberries in a large bowl.

Add in the wet ingredients: Buttermilk (3/4 cup), egg yolks, Butter (1/2 cup), fold in the egg whites.

Spoon the waffle batter onto your waffle maker and then follow your waffle-maker instructions until the waffles are crisp and golden brown.

For the Vanilla Cream, mix the Granulated Sugar (1/3 cup), Corn Starch (2 Tbsp), Salt (1 pinch) in a 2-quart saucepan. Gradually stir in the Milk (2 cups).

Cook over medium heat, stirring constantly, until mixture thickens and boils. Allow the mixture to boil for one minute.

Add half of the mixture into slightly beaten Eggs (2) then add back that mixture into the saucepan.

Boil for one more minute, and then add Butter (2 Tbsp) and Vanilla Extract (1 dash). Stir until well combined.

Pour over waffles, garnish with the rest of the blackberries and enjoy!
