Step 1
Put a saucepan on low heat and add
Extra-Virgin Olive Oil (1/4 cup)

Step 2
Add the finely chopped
Onion (1/4)
and chopped
Carrot (1)
to the saucepan.

Add the
Osso Buco (14 oz)
and stir all together.
Step 4
Once the meat is browned on both sides, but not yet cooked through, add the
Mushrooms (1 cup)
and stir once again.
Step 5
Once the meat has cooked for 3-4 minutes, add the
Vegetable Stock (1 2/3 cups)
and stir through.
Step 6
Increase the heat of the stove and leave to simmer for another 2 minutes so the meat and mushrooms can get familiar!
Step 7
Now, add the
Finely Chopped Tomatoes (4 1/2 cups)
and stir once again.
Step 8
Add a pinch of salt, a sprinkle of
Dried Mixed Herbs (1 pinch)
, chopped
Fresh Parsley (1 bunch)
, and a handful of chopped
Fresh Basil (1 bunch)
.
Step 9
Finally, add the
White Beans (1 can)
,
Lima Beans (1 can)
and
Black Olives (12)
to your mixture.
Step 10
Make sure the stove remains on a medium heat and let this cook for at least 25 minutes. You should leave the lid on and every 5-6 minutes check and stir the ingredients.
Step 11
After 25 minutes has passed, remove the lid from your saucepan and grate some
Parmesan Cheese (to taste)
cheese over the top.
Step 12
Check that your sauce is not too runny and not too dense. You can now switch off the stove.
Step 13
Transfer a portion of your mix to a plate and add a small pinch of pepper.
Step 14
For a final hit of flavor, you might also want to add a few fresh pieces of parsley on top - and this will make your dish smell and taste even more vibrant. Serve and enjoy!
