Heat oil in a medium sauté pan, fry the Bacon (8 slice) till crispy. Drain on paper towel and set aside for later use.
Cut out a hole from the center of each Bread (4 slice). You can use a biscuit cutter or simply scissors and knife.
Heat half of the Unsalted Butter (2 tablespoon) in a nonstick skillet on medium-high heat. When the butter is no longer foaming, place bread slices in the skillet. If the skillet is small, you can do one or two at a time.
Crack one Egg (4) into the centre of each slice of bread. Season with Salt and Pepper (to taste).
Cook for about 3 minutes, then flip the sandwich over and cook to your liking of the eggs.
Cut the Tomato (2) into slices.
Slice the Avocado (2) in half. Use a spoon to take out the core, then scoop out the flesh of the avocado.
Slice the avocados as thick or thin as you like.
Place 2 slices of bacons on each sandwich.
Top with 2 slices of tomatoes and avocados.
Season with salt, pepper and Fresh Herbs (to taste) and serve.
