step 1
In a large bowl, add Steak (2 lb) and season with Adobo Seasoning (1 tsp), Ground Black Pepper (to taste), Lime (1), Low-Sodium Soy Sauce (1 tsp), Ground Oregano (as needed) and Garlic (4 cloves). Mix together until all the ingredients are well blended. Marinate for better flavor, but is not necessary.
step 2
In a large pot oven over medium high heat, add cooking oil and allow to get hot. Add beef, lower heat to medium, give it a stir and cover and cook until the meat absorb its own juices.
step 3
Once there are no more juices in the pan, add Water (3 cups) 1 cup at a time and continue cooking the meat, covered, until tender. If the meat is still not tender after it has absorbed the water, continue adding 1 cup water at a time.
step 4
Repeat until the steak is tender. For me, meat was tender after 50 minutes, with 3 cups of water used in total. The time and water needed will depend on the cut of meat you use.
step 5
Once the beef is tender, add Red Onion (1/2), Red Bell Pepper (1/2) and Green Bell Pepper (1/2). Stir to combine, add few tablespoons of water and mix. Cover and cook for about 2 minutes. Turn off heat.
step 6
Serve with rice, rice and beans, fried plantains or whatever your heart desires.
