In a small skillet, heat the Olive Oil (1 tablespoon) over medium heat. Add the Shallot (2) and sweat them until soft and translucent. Transfer the shallots to a large bowl.
Add shallots to a bowl with Ground Turkey (1.25 pound), Fresh Cilantro (1/2 cup), Sriracha (1/4 cup), Kosher Salt (1/2 teaspoon), and Ground Black Pepper (1/2 teaspoon).
Combine the ingredients well with hands. Form the burgers into 4 equal patties and transfer to a sheet pan. Refrigerate the patties for 15 minutes to firm up.
Preheat the grill to 450 degrees F (230 degrees C). When grill is hot add the burgers and cook about 5 minutes per side. During the last minute of cooking, place a American Cheese Slice (4 slice) each burger and cook until it's just melted.
To make the sauce, combine the Mayonnaise (1/2 cup), Sriracha (2 tablespoon), Fresh Cilantro (2 tablespoon), Lime (1), and Sriracha (1 teaspoon).
Take the Hamburger Bun (4), and burgers with Sliced Avocado (1) the bottom bun, followed by the burger, a tablespoon of Sriracha Aioli and extra Fresh Cilantro (to taste) if desired. Serve and enjoy!
