In a standing mixer, combine Butter (1/2 cup), Brown Sugar (1/4 cup), Granulated Sugar (1/3 cup), Vanilla Extract (1 teaspoon), and Almond Extract (1 teaspoon). Add in the Egg (1) and mix just until combined.
Stop the mixer and add in the All-Purpose Flour (2 cup), Baking Soda (1 teaspoon), and Salt (3/4 teaspoon). Turn the mixer on slow and slowly drizzle in the Buttermilk (1 cup).
The batter will be thick. Place in a piping bag and cut a dime-sized hole for the opening. Spray two mini donut pans with cooking spray and pipe in the batter until 3/4 full.
Bake in the oven for 7-8 minutes. Let cool in the pans for 5 minutes before turning out onto a cooling rack. Let cool completely.
Mix the Powdered Confectioners Sugar (2 1/2 cup), Butter (1/4 cup), Heavy Cream (1/4 cup), Almond Extract (1/2 teaspoon), and Food Coloring (to taste) together and microwave in 30-second increments until it’s a consistency good enough for drizzling.
Dip the donuts into the frosting and place sprinkles on immediately. Mix the frosting in between each donut. You will need to re-heat the frosting as needed every few minutes.
Serve once the frosting on all the donuts has set.
