Melt the Unsalted Butter (1 tablespoon) and whisk half of it into the All-Purpose Flour (1 cup), Egg (2), Salt (1/2 teaspoon), Ground Black Pepper (1/8 teaspoon), and Milk (1 cup).
Stir in Cheddar Cheese (1/3 cup), Dried Oregano (1/2 teaspoon) and Dried Thyme (1 1/2 tablespoon). Let the batter rest for an hour.
Preheat the oven to 425 degrees F (220 degrees C). Put the rack in the upper third of the oven.
Butter a standard size muffin tin, or use two mini-muffin tins with the remaining Unsalted Butter (1 tablespoon) and put in the oven until it sizzles.
Stir the batter and divide between muffin cups. You may add a 1/2 tsp of Just Jan’s® Apricot Fruit Spread (to taste) to the batter in each cup.
Bake for 18 to 20 minutes until they are puffed and golden brown. It’s best to serve them immediately.
