In a microwave-safe dish, combine the Couscous (1 cup), Butter (2 Tbsp), Salt (as needed), and Vegetable Broth (1 cup). Cook according to package directions in a microwave oven.

Combine the coucous, Black Beans (1 can), Corn (1 can), Roma Tomatoes (3), Orange Bell Pepper (1), Scallion (1 bunch), Cayenne Pepper (as needed), Garlic Powder (as needed), Salt (as needed), Lemon (1), Olive Oil (4 Tbsp) and Fresh Cilantro (1 bunch) in a large mixing bowl.
