Step 1
In a microwave-safe dish, combine the Couscous (1 cup) , Butter (2 Tbsp) , Salt (1/2 tsp) , and Vegetable Broth (1 cup) . Cook according to package directions in a microwave oven.
Step 2
Fluff the couscous with a fork after cooking, and set aside to cool.
Step 3
Combine the coucous, Black Beans (1 can) , Corn (1 can) , Roma Tomatoes (3) , Orange Bell Pepper (1) , Scallions (1 bunch) , Cayenne Pepper (1/2 tsp) , Garlic Powder (1/2 tsp) , Salt (1/2 tsp) , Lemon (1) , Olive Oil (1/4 cup) and Fresh Cilantro (1 bunch) in a large mixing bowl.
Step 4
Mix well and refrigerate until ready to serve. Enjoy!
