This Italian classic Antipasto Salad is bursting with a wide variety of flavors from the salami, pepperoni, artichoke, olives, and parmesan. This recipe makes a great low-carb dinner or appetizer, especially when you don’t feel like turning on the stove.

In a large bowl, combine the Romaine Lettuce (1 head), Pepperoncini Peppers (6), Pepperoni Sausage (1/4 cup), Salami (1/4 cup), Artichoke Hearts (1/2 cup), Black Olives (1/4 cup), Green Olives (1/4 cup), Grated Parmesan Cheese (2 Tbsp), and Vinaigrette (1 Tbsp).
Toss together and serve.
Toasted pine nuts go great in this salad. Just heat a dry skillet over medium-low heat and add the pine nuts. You need to stir the pine nuts frequently to evenly toast then without burning. It should take 2-3 minutes.
