This meatloaf freezes really well too, so that makes it perfect for meal prep options. Fresh from the oven, you can serve this with a cauliflower mash or a keto mac and cheese recipe.

Preheat the oven to 350 degrees F (180 degrees C). Oil the bottom and sides of a loaf tin.

Mix Ground Chicken (1.1 lb), Egg (1), Garlic (2 cloves), Onion (1), Fresh Rosemary (2 Tbsp), Crushed Red Pepper Flakes (1 tsp), Cayenne Pepper (as needed), Salt (as needed), and Ground Black Pepper (as needed) together in a large bowl until well-combined.

Press the mixture flat into the sides of the loaf tin. Get it as flat as possible. Add most of the Cheddar Cheese (3/4 cup) and Tomato Passata (2 Tbsp) over the meatloaf.

Bake for 45-50 minutes. Halfway through, take out the meatloaf and sprinkle over more Cheddar Cheese (4 Tbsp) and rosemary, then place it back in the oven to continue cooking.

Let rest for 5-10 minutes before removing from the pan and slicing to serve.
