This meatloaf freezes really well too, so that makes it perfect for meal prep options. Fresh from the oven, you can serve this with a cauliflower mash or a keto mac and cheese recipe.

Preheat the oven to 350 degrees F (180 degrees C). Oil the bottom and sides of a loaf tin.

Mix Ground Chicken (1.1 lb), Egg (1), Garlic (2 cloves), Onion (1), Fresh Rosemary (2 Tbsp), Crushed Red Pepper Flakes (1 tsp), Cayenne Pepper (1/2 tsp), Salt (1/2 tsp), and Ground Black Pepper (1/2 tsp) together in a large bowl until well-combined.

Press the mixture flat into the sides of the loaf tin. Get it as flat as possible. Add most of the Cheddar Cheese (3/4 cup) and Tomato Passata (2 Tbsp) over the meatloaf.

Bake for 45-50 minutes. Halfway through, take out the meatloaf and sprinkle over more Cheddar Cheese (1/4 cup) and rosemary, then place it back in the oven to continue cooking.

Let rest for 5-10 minutes before removing from the pan and slicing to serve.
