Step 1
Preheat the oven to 350 degrees F (180 degrees C). Oil the bottom and sides of a loaf tin.
Step 2
Mix
Ground Chicken (1.1 lb)
,
Egg (1)
,
Garlic (2 cloves)
,
Onion (1)
,
Fresh Rosemary (2 Tbsp)
,
Crushed Red Pepper Flakes (1 tsp)
,
Cayenne Pepper (1/2 tsp)
,
Salt (1/2 tsp)
, and
Ground Black Pepper (1/2 tsp)
together in a large bowl until well-combined.
Step 3
Press the mixture flat into the sides of the loaf tin. Get it as flat as possible. Add most of the
Cheddar Cheese (3/4 cup)
and
Tomato Passata (2 Tbsp)
over the meatloaf.
Step 4
Bake for 45-50 minutes. Halfway through, take out the meatloaf and sprinkle over more
Cheddar Cheese (1/4 cup)
and rosemary, then place it back in the oven to continue cooking.
Step 5
Let rest for 5-10 minutes before removing from the pan and slicing to serve.
