Preheat oven to 400 degrees F (200 degrees C).
Put Onion (1), Lemon (1), Pomegranate Concentrate (1 tablespoon), Za'atar (1 tablespoon), Plain Yogurt (1 tablespoon), Oil (1 tablespoon), Salt and Pepper (to taste) in a baking pan.
Rub Chicken Breast (1 pound) in the marinade.
Bake in a preheated oven until juices run clear and internal temperature is 165 degrees F (74 degrees C).
When chicken is done, let it cool. Slice the chicken into thin slices.
Toss sliced chicken and Tomato (1) with Oil (1/2 teaspoon) and Pomegranate Concentrate (1/2 teaspoon).
Spread a thin layer of Garlic Mayonnaise (to taste) on Flour Tortilla (to taste) and add chicken mixture, Fresh Parsley (1 tablespoon), and Pickled Cucumber (to taste).
Roll up the sandwich.
Put the sandwich on the grill and press on top of it with the pan. Flip the sandwich and press again.
