Preheat oven to 400 degrees F (200 degrees C).
Pulse Melba Toast (1 package) in food processor until it turns into crumbs but make sure they're not too fine.
Add Italian Seasoning (1 tablespoon), Garlic Powder (1 teaspoon), Onion Powder (1 teaspoon), Granulated Sugar (1 teaspoon), Ground Black Pepper (1 1/2 teaspoon), and Salt (1/2 tablespoon) to toast crumbs.
Put the Milk (3/4 cup), All-Purpose Flour (1 tablespoon), and Egg (1) in a bowl. Add some spices to this too if you like.
Dip Chicken Tenders (1 pound) in the eggy milky floury batter.
Dip chicken again in toast crumbs. Press well so the coating sticks to the chicken.
Arrange coated chicken fingers on baking sheet and spray with Oil (to taste).
Bake in a preheated oven until they are golden brown. Serve with ketchup or dipping sauce of choice.
