Mature Cheddar Cheese , shredded

Step 1
Melt Salted Butter (3 1/2 Tbsp) in a saucepan over medium heat.
Step 2
Add All-Purpose Flour (1/2 cup) and whisk rapidly to combine.
Step 3
Reduce to low heat and continue to whisk as the mixture cooks into a paste (roux), about two minutes. Be careful not to let it burn.
Step 4
Slowly begin incorporating Milk (2 cups) , a splash at a time, whisking continuously.
Step 5
Continue to add milk and cook until the mixture forms a paste, about ten minutes.
Step 6
Once mixture is smooth and thick, take off heat.
Step 7
Add in Mature Cheddar Cheese (2/3 cup) , and Salt (to taste) and Ground Black Pepper (to taste) .
Step 8
Serve and enjoy!
