Preheat your oven to 325 degrees F (160 degrees C). Season the Veal Shanks (4 pound) with Kosher Salt (to taste), Sriracha (to taste), and Granulated Garlic (to taste).
Roast at 325 degrees F (160 degrees C) for 4 hours, baste every 20 minutes with Beer (to taste) of your choice.
Deglaze the roasting dish/pan with Red Wine (to taste), strain the jus, check and adjust the flavor.
In a separate pan saute Bacon (4 ounce) in Garlic & Herb Butter (2 ounce).
Once the bacon is crisp, add Brussels Sprouts (8 ounce), saute until heated through, check and adjust seasonings.
Carve the veal shank and serve with Brussels sprouts.
