Step 1
Preheat your oven to 325 degrees F (160 degrees C). Season the
Veal Shanks (4 lb)
with
Kosher Salt (to taste)

Sriracha (to taste)

Granulated Garlic (to taste)
.
Step 2
Roast at 325 degrees F (160 degrees C) for 4 hours, baste every 20 minutes with
Beer (to taste)
of your choice.
Step 3
Deglaze the roasting dish/pan with
Red Wine (to taste)
, strain the jus, check and adjust the flavor.
Step 4
In a separate pan saute
Bacon (4 oz)
in
Garlic & Herb Butter (1/4 cup)
.
Step 5
Once the bacon is crisp, add
Brussels Sprouts (2 1/2 cups)
, saute until heated through, check and adjust seasonings.
Step 6
Carve the veal shank and serve with Brussels sprouts.
