Preheat oven to 220 degrees C (425 degrees F) or 200 degrees C fan oven (400 degrees F).

Cut Tomatoes (11 cups), Onion (1), Garlic (4 cloves), Carrot (1), and Fresh Basil (1 handful) into chunks and transfer into a deep baking dish to collect all the juices later.

Mix all the seasoning ingredients: Granulated Sugar (1 Tbsp), Mushroom Seasoning (1 tsp), Salt (to taste), Dried Oregano (to taste), Ground Black Pepper (to taste), and Olive Oil (1/2 cup) together.

Drizzle in the seasoning and toss well.

Roast it for 30 to 40 minutes.

Place the mixture into a blender and puree until smooth.

Transfer into a pot and add in Water (2 cups). Taste it for seasoning in case you may want to adjust and bring it to a boil.

For the croutons, preheat your oven to 220 degrees C (425 degrees F) or 200 degrees C fan oven (400 degrees F).

Slice a Baguette (1), seasoning them with Olive Oil (1/4 cup), Dried Basil (1 Tbsp) and Ground Black Pepper (to taste).

Transfer into a baking tray and toast them for 5 to 10 minutes until crispy golden brown.
