Step 1
Preheat oven to 220 degrees C (425 degrees F) or 200 degrees C fan oven (400 degrees F).

Cut
Tomatoes (11 cups)

Garlic (4 cloves)

Fresh Basil (1 handful)
into chunks and transfer into a deep baking dish to collect all the juices later.
Step 3
Mix all the seasoning ingredients:
Granulated Sugar (1 Tbsp)

Mushroom Seasoning (1 tsp)

Salt (to taste)

Dried Oregano (to taste)
,
Ground Black Pepper (to taste)
, and
Olive Oil (1/2 cup)
together.
Step 4
Drizzle in the seasoning and toss well.

Roast it for 30 to 40 minutes.
Step 6
Place the mixture into a blender and puree until smooth.

Transfer into a pot and add in
Water (2 cups)
. Taste it for seasoning in case you may want to adjust and bring it to a boil.

For the croutons, preheat your oven to 220 degrees C (425 degrees F) or 200 degrees C fan oven (400 degrees F).

Slice a
Baguette (1)
, seasoning them with
Olive Oil (1/4 cup)

Dried Basil (1 Tbsp)
and
Ground Black Pepper (to taste)
.
Step 10
Transfer into a baking tray and toast them for 5 to 10 minutes until crispy golden brown.
