Step 1
Put
Chocolate Chips (1 cup)
in an airtight bag and put it in the freezer.
Step 2
Mix the
All-Purpose Flour (4 cups)
,
Water (1/2 cup)
,
Milk (1/2 cup)
,
Instant Dry Yeast (1/2 Tbsp)
and
Granulated Sugar (1/2 cup)
in a bowl and combine.
Step 3
Massage this for around 10 minutes so that it begins to form into dough.
Step 4
Mix together
Honey (1 Tbsp)
and
Vanilla Extract (1 Tbsp)
Step 5
Pour the honey and vanilla mix into your dough.
Step 6
Add an
Egg (1)
and mix using a mixer. You can also use your hands.
Step 7
Add
Butter (3 Tbsp)
and mix with the mixer once again.
Step 8
5 minutes before the dough is ready, add
Salt (1 pinch)
and the chocolate buds (so they don't melt).
Step 9
Knead the dough with your hands only, once again.
Step 10
Once you are happy with the consistency of the dough for your Italian Hot Cross Buns, place it into a bowl and seal it tightly with cling film. Leave it to rise overnight to ensure a really moist result.
Step 11
Remove the dough from the fridge (It should have risen) and begin to knead it gently once again to remove any possible air pockets.
Step 12
Cut the dough into thick strips and then small pieces that weigh 50g each.
Step 13
Create round balls by rolling them using the palm of your hands.
Step 14
Place each ball onto a flat baking tray lined with baking paper leaving enough room in between each one so they can grow.
Step 15
Cover them for 2-3 hours by gently placing a tea towel over the top and leaving gaps so they can rise.
Step 16
Separate
Egg (1)
Yolk and White. Mix the Egg Yolk and
Milk (1 Tbsp)
together and lightly paste the mixture over the top of each Italian Hot Cross Bun like a glaze (not too much or else they will burn).
Step 17
Bake in a preheated oven for 10 min at 180 degrees C (350 degrees F).
Step 18
Let the buns cool for 5 to 10 minutes. Serve and enjoy!
