Step 1
Dice the
Onion (1/2)
,
Garlic (2 cloves)
,
Green Bell Pepper (1/4)
, and
Red Chili Pepper (1/4)
. In a pan, sweat them for about 10 mins until soft.
Step 2
When the vegetables are soft, add the
Canned Tuna (1 cup)
and leave to cook for 10 to 15 minutes and leave to cool.
Step 3
In a bowl, add the
Mashed Potatoes (1.1 lb)
,
Fresh Chives (2 Tbsp)
,
Fresh Parsley (2 Tbsp)
,
Fresh Dill (1 Tbsp)
and the cooled tuna.
Step 4
Season with
Salt (1/2 Tbsp)
and
Ground Black Pepper (1/2 tsp)
and mix well, first with a wooden spoon and then with your hands as if kneading.
Step 5
When the mix is well combined start to make the croquettes shaping to your preference. Preheat the oven to 220 degrees C (425 degrees F).
Step 6
Beat
Free Range Egg (2)
in one bowl and place
Breadcrumbs (to taste)
in a separate bowl. Roll each croquette through the eggs and breadcrumbs until covered.
Step 7
Place in a well buttered baking tray.
Step 8
When all the mix has been used, place the tray in a preheated oven at 220 degrees C (425 degrees F) for 30 minutes or until golden brown.
