Step 1
Preheat the oven to 190 degrees C (375 degrees F).
Step 2
Add Large Egg (1) , Yogurt (1 cup) , Vegetable Oil (1/3 cup) , and Vanilla Essence (1/2 tsp) to a large bowl and whisk to a smooth consistency. Set aside wet ingredient mixture.
Step 3
In a new large bowl add All-Purpose Flour (2 cups) , Granulated Sugar (1/2 cup) , Baking Powder (1 1/4 tsp) , Baking Soda (1/2 tsp) , Salt (1/4 tsp) and mix. Add the Fresh Blueberries (2 1/3 cups) and gently mix.
Step 4
Add the wet ingredients prepared earlier and fold in gently until combined.
Step 5
Prepare the muffin tray with liners. Use a ice cream scoop or spoon to fill the muffin cups with the batter.
Step 6
Bake for about 15-20 minutes.
Step 7
Remove the muffins from the oven and let it cool. Good job! You and your oven make a great team! Enjoy the muffins!
