Step 1
Spiralize
Sweet Potatoes (2)
or cut them into small matchstick pieces.
Step 2
Grease stovetop pan with a little
Extra-Virgin Olive Oil Cooking Spray (as needed)
, then add sweet potatoes and cook on the burner over medium heat for approximately 5-7 minutes or until sweet potatoes noodles/matchsticks are tender.
Step 3
Add
Smoked Paprika (1 tsp)
,
Chili Powder (1 tsp)
,
Ground Turmeric (1/2 tsp)
,
Garlic Powder (1/2 tsp)
, and
Cayenne Pepper (1/8 tsp)
about midway through and stir well to incorporate.
Step 4
Meanwhile, wash and prepare your
Romaine Hearts (5)
, pat dry with clean paper towel and set aside.
Step 5
Rinse and drain
Organic Black Beans (1/2 cup)
and
Whole Kernel Corn (1/2 cup)
. Rinse and chop
Tomatoes (1/2 cup)
then set all toppings aside.
Step 6
For the avocado sauce, mix
Avocado (1/2)
with
Sour Cream (2 Tbsp)
and
Salsa (2 Tbsp)
, stir well.
Step 7
Once sweet potatoes are cooked, remove from the stovetop or oven and allow to cool a few minutes.
Step 8
Assemble your lettuce wraps with a layer of avocado sauce, followed by cooked sweet potatoes, and favorite toppings, serve!
