Grease stovetop pan with a little Extra-Virgin Olive Oil Cooking Spray (as needed), then add sweet potatoes and cook on the burner over medium heat for approximately 5-7 minutes or until sweet potatoes noodles/matchsticks are tender.

Add Smoked Paprika (1 tsp), Chili Powder (1 tsp), Ground Turmeric (as needed), Garlic Powder (as needed), and Cayenne Pepper (as needed) about midway through and stir well to incorporate.

Meanwhile, wash and prepare your Romaine Hearts (5), pat dry with clean paper towel and set aside.

Rinse and drain Organic Black Beans (1/2 cup) and Whole Kernel Corn (1/2 cup). Rinse and chop Tomato (1/2 cup) then set all toppings aside.

For the avocado sauce, mix Avocado (1/2) with Sour Cream (2 Tbsp) and Salsa (2 Tbsp), stir well.
