Preheat oven 375 degrees F (190 degrees C).
Frozen Tater Tots (50)
in a microwave oven for a minute or two. Spray a 12-cup muffin pan with
Nonstick Cooking Spray (as needed)
Place 4 or 5 tots in each cup. Mash with a back of spoon to line the bottom and sides of each cup. Add 1 tablespoon of
Shredded Cheddar Cheese (3/4 cup)
into each cup. Place in oven and bake 5 minutes.
Remove the muffin pan from oven and break an
into each cup. Sprinkle a little more cheese on top of each egg. Bake 12 to 15 minutes until white and yolk are set and the eggs reach to your desired doneness.
Remove from oven and use a rubber spatula to loosen the edges and bottom of each tater tot cup. Transfer the cups to a serving platter. Sprinkle with
Ground Black Pepper (to taste)
Scallions (to taste)
. Serve and enjoy!
