Scrape the pumpkin flesh from the peel. The flesh will peel away from the skin. Either mash, or puree in small batches in a blender. Increase oven temperature to 450 degrees F (230 degrees C).

In a large bowl, slightly beat Eggs (2), add Brown Sugar (1 cup), All-Purpose Flour (1 Tbsp), Salt (1/2 tsp), Ground Cinnamon (1 Tbsp), Ground Nutmeg (1/2 Tbsp), Ground Ginger (1 tsp), 2 cups of the pumpkin puree, and Evaporated Milk (1 can).
