Marinated and Grilled Lamb or Steak Shish Kebobs

Shish kabobs with veggies, mushrooms, and lamb marinated in a to-die-for marinade and grilled to perfection. This is perfect for spring and summer entertaining!

17 Ingredients

1/4 cup Olive Oil

2 Tbsp Lemon Juice

2 clove Garlic

1 tsp Paprika

1 tsp Cumin

1 tsp Ground Coriander

1 tsp Salt

1/2 tsp Fresh Oregano

1/4 tsp Black Pepper

2 lb Boneless Leg of Lamb

3 Assorted Color Bell Peppers

1 Red Onion

8 oz Button Mushroom

8 Metal Skewers

to taste Sea Salt

to taste Black Pepper

to taste Cilantro

Steps 1

Combine Olive Oil, Lemon Juice, thinly sliced Garlic, Paprika, Cumin, Ground Coriander, Salt, Fresh Oregano, and Black Pepper in a bowl and mix to combine.

Steps 2

Trim any excess fat or silver skin from the Boneless Leg of Lamb or steak and cut into 2 inch cubes. Add to a large bowl with the Assorted Color Bell Peppers, Red Onion, and Button Mushroom.

Steps 3

Add the marinade and marinate in the fridge for up to two hours. Assemble the Metal Skewers with the lamb, onion, bell pepper, and mushroom. Repeat, switching the sequence if desired. Season once more with a pinch of Sea Salt and Black Pepper.

Steps 4

Grill 12 minutes, turning kabob to cook evenly. Garnish with Cilantro.
