I really enjoy the mango in this recipe and it is my favorite fruit so I’m a bit biased, but you can substitute pineapple. Pineapple has fewer carbs per serving than mango.

Cooking Instructions

Boil a pot of water large enough for the green beans.

Meanwhile, prep the salsa ingredients. Chop Mango (1) and Red Bell Pepper (1/2 cup) into ¼ inch pieces. Chop Red Onions (3 Tbsp) and Fresh Cilantro (4 Tbsp) finely.

Combine everything in a bowl.

Squeeze the Lime (1) and mix, then set aside.

Microwave the Sweet Potatoes (4) on the baked potato setting.

When water is at a rapid boil, add the Green Beans (4 handfuls) and boil 4-5 minutes. Immediately drain and rinse thoroughly in cold water.

Place potatoes on serving plates and cut them open. Add Butter (to taste) and sprinkle with Salt (1 pinch).

Fill the potato with the salsa.

Drizzle Honey (1 Tbsp) over everything. Serve with the green beans and a squeeze of lime.
