Boil a pot of water large enough for the green beans.
Meanwhile, prep the salsa ingredients. Chop Mango (1) and Red Bell Pepper (1/2 cup) into ¼ inch pieces. Chop Red Onion (3 tablespoon) and Fresh Cilantro (1/4 cup) finely.
Combine everything in a bowl.
Squeeze the Lime (1) and mix, then set aside.
Microwave the Sweet Potato (4) on the baked potato setting.
When water is at a rapid boil, add the Green Beans (4 handful) and boil 4-5 minutes. Immediately drain and rinse thoroughly in cold water.
Place potatoes on serving plates and cut them open. Add Butter (to taste) and sprinkle with Salt (1 pinch).
Fill the potato with the salsa.
Drizzle Honey (1 tablespoon) over everything. Serve with the green beans and a squeeze of lime.
