Author's Notes

I really enjoy the mango in this recipe and it is my favorite fruit so I’m a bit biased, but you can substitute pineapple. Pineapple has less carbs per serving than mango.

Cooking Instructions

Step 1
Boil a pot of water large enough for the green beans.
Step 2
Meanwhile, prep the salsa ingredients. Chop Mango (1) and Red Bell Peppers (1/2 cup) into ¼ inch pieces. Chop Red Onions (3 Tbsp) and Fresh Cilantro (1/4 cup) finely.
Step 3
Combine everything in a bowl.
Step 4
Squeeze the Lime (1) and mix, then set aside.
Step 5
Microwave the Sweet Potatoes (4) on the baked potato setting.
Step 6
When water is at a rapid boil, add the Green Beans (4 handfuls) and boil 4-5 minutes. Immediately drain and rinse thoroughly in cold water.
Step 7
Place potatoes on serving plates and cut them open. Add Butter (to taste) and sprinkle with Salt (1 pinch) .
Step 8
Fill the potato with the salsa.
Step 9
Drizzle Honey (1 Tbsp) over everything. Serve with the green beans and a squeeze of lime.
