Boil a pot of water large enough for the green beans.
Meanwhile, prep the salsa ingredients. Chop
Red Bell Peppers (1/2 cup)
into ¼ inch pieces. Chop
Red Onions (3 Tbsp)
Fresh Cilantro (1/4 cup)
Combine everything in a bowl.
and mix, then set aside.
Sweet Potatoes (4)
on the baked potato setting.
When water is at a rapid boil, add the
Green Beans (4 handfuls)
and boil 4-5 minutes. Immediately drain and rinse thoroughly in cold water.
Place potatoes on serving plates and cut them open. Add
Butter (to taste)
and sprinkle with
Salt (1 pinch)
Fill the potato with the salsa.
Honey (1 Tbsp)
over everything. Serve with the green beans and a squeeze of lime.
